WEEKNIGHT DINNER: ORGANIC ROSEMARY CHICKEN

An organic chicken dinner is the best way to get your protein in for the day. Combined with luscious brown rice and crispy asparagus, you've got a well rounded meal that your body will love after a hectic day at work. Checkout my recipe below and try it out yourself!
Ingredients:
- Organic boneless skinless chicken breast from whole foods
- Fresh Organic asparagus bunch
- Organic brown rice (microwaveable)
- Organic olive oil
- Sea salt
- Rosemary
- 1/2 Organic Lemon

Squeeze your half lemon slice into a small bowl and add salt + pepper. Cut a clean piece of chicken breast and toss it in the lemon juice. Prepare a medium sized skillet on medium heat with olive oil and add the chicken when the pan is heated. Cook your chicken until golden and cooked all the way through (about 25 minutes).
Next, slice your asparagus as you like it (I did mine in thirds) and drizzle olive oil over them in a small pan, cooking in the oven for about 20 minutes on 300 degrees. I made mine crispy but you can cook it to your taste. When the chicken has about 5 minutes left to cook, add fresh rosemary and frozen brown rice (whole foods or Trader Joe's) to the pan with olive oil and stir for 5 minutes.
Finally, take out your asparagus and add it all to a plate with your crispy rosemary on top! Serve with olive oil and sea salt and an extra squirt of lemon to taste 🍋
